My Thanksgiving Feast

The Children Loved the Candlelit Dinner

Our Thanksgiving Feast at our own home was tonight:

Menu:

Baked Turkey Breast (10 pounds).  Brine in heavy salt water for 24 hours in frig.  Cook in baking bag 3 hours at 350 with 1/2 stick of butter in cavity (no salt added, no water added), butter the skin.  Mmmm.  Very tender.

Dressing:  My Mom’s recipe:  1/2 loaf homemade cornbread, 5 bisquits (all crumbled), 1 C. Celery (minced), 1 C onion (minced), 1 can Campbells celery soup.  I can campbells french onion soup ( or 1 can beef broth + 1 package liption onion mix), 2-3 T. Sage (or poultry seasoning), 2 eggs, and turkey broth to smooth consistency (but not slothy…Mom’s very words).  Bake 350 degrees for 45 minutes to an hour. 

Corn

Green Beans with Bacon Seasoning or Onion Seasoning

My World Famous Mashed Potatoes (cook ‘em, salt ’em, and put ‘em on a stand mixer with butter and milk…beat the tarnation out of ‘em on high speed for 15 minutes or so.  Mmmm.  Creamy delight!) 

Homemade Mac & Cheese (Macaroni Noodles, 1 box, plus 3/4 Velveeta loaf, 1/4 stick of butter, and milk to smooth).

Cranberry Jelly

Homemade Tea (sweetened with Splenda)

Homemade Rolls (the Deli takes this one)

Chocolate Pudding Pie (which we called mudslide pie, because it didn’t set)

Apple Pie (which the frozen food section made)

Pecan Pie (which my husband brought home from work)

Pumpkin Bread with Chocolate Chips (brought home by hubby this time)

Coffee

Mandarin Oranges (from the can…treat for the kids)

Plus….Lots of Candles and Lots of Thanksgiving Decorations!  (No Christmas stuff around here until we have celebrated Thanksgiving through Thanksgiving Day!)

Daddy gives thanks, hands held all around, we fix plates, and everyone tells what they were thankful for this year.  Everyone had a ready answer except for me.  I said, “I’m just real hungry and real glad to get off my feet at the moment!  I’ll have to think on it!”  But, I quickly agreed with what everyone else said!  Just a lot of my mind getting food on the table!  Mmmm.  It was good.  Much food prepared in advance this year (per Misty(sidebar) and my Mom’s recommendation over last year’s first frenzied attempt).  I was calm, cool, collected, and even kind today.  Yeah!

    Looks lovely Mag!!! Happy Thanksgiving. May God bless you and your family and remind all of you that we all have so much to be thankful on this day and all other days, for the ‘Lord our God is good and His mercy endureth forever.’ :) Lots of blessings! I’m about to get my cook on now! Made my peach cobbler last night but about to start on the sweet potatoes, macaroni and cheese, baked beans, meat and cranberry sauce in a little bit. Say a lil prayer for me :)

    This was sweet but really it cracked me up; your comment about what you were thankful for – I loved the honesty. I’m hungry, my feet are tired. And the mandarin oranges out of the can for the kids – too sweet. I have to say your mom’s dressing recipe is very very different than anything I’ve ever seen and I may just try it. xoxo

    Don’t we look funny in that picture? 1. It was dark…because of the candles (the kids weren’t used to that AT ALL). 2. I set the timer to take the picture and it just really through everyone off guard, and 3. We were all STARVING from the good smells.

Magnanimity (derived from the Latin roots magn- great, and anima, soul) is the virtue of being great of mind and heart.
